Asian Cobb Salad



After all the food we ate yesterday, I wanted to make something healthy for dinner tonight.  This took almost no time to throw together – it’s a really easy weeknight meal. 

Asian Cobb Salad (adapted from Damn Delicious)

Ingredients:

·        1 bag salad (you could use Romaine, Iceberg, or whatever mix you like)
·        1-11 ounce can mandarin oranges, drained
·        1 shredded chicken breast (I used a Rotisserie chicken to make it easier)
·        1/3 cup shredded carrots
·        1 avocado, diced
·        2 hard-boiled eggs, sliced (I thought we had more eggs, but turns out we only had 1…)
·        ¼ cup sliced green onions
·         ¼ cup olive oil
·        1 clove garlic, minced
·        1 T peanut oil
·        1 tsp sugar
·        1 tsp freshly grated ginger
·        1 tsp soy sauce
·        Handful of peanuts
Directions:
1. Whisk together the olive oil, garlic, peanut oil, sugar, ginger, and soy sauce in a small bowl and set aside.
2. Assemble the other salad ingredients and toss with the dressing. Serve, then garnish with peanuts.
