Mother's Day Brunch Recipes

Hope you all had a happy Mother’s Day!  I tried two new recipes this past weekend for our brunch. It was at my parents’ place, but I didn’t want my mom to have to make anything.  My dad made our traditional “John Wayne” casserole along with bacon and cinnamon rolls. I made a sweet potato crusted quiche and a fruit tart.  And my Grandma Anne brought some beautiful tulips.

The quiche was a huge success – it was healthy and a lot simpler than I expected.  I’ll definitely make that again.

The fruit tart looked beautiful, but unfortunately it was a way more complicated recipe than I had planned for. I should have read ahead of time that it requires several hours or up to a day of preparation, so it didn’t set properly. The pastry cream was more of a yogurt consistency and after putting it in the freezer to try to get it to firm up, the crust was so hard we couldn’t cut through it.  So we ended up serving it more like a parfait instead.

I’ll also post the recipe for the “John Wayne” casserole. This is one of my dad’s all-time favorite dishes to make. My Grandma Anne came across this recipe in a magazine years ago and it’s been in our family ever since. If you’re looking for a healthy egg dish, this is not your thing. It is loaded with two pounds of cheese and has evaporated milk to give it a creamy consistency.  The green chiles give it just the right amount of spiciness.

Sweet Potato Crusted Quiche (adapted from Cooking Light)

Ingredients:
·        2 medium sweet potatoes
·        1 teaspoon canola oil
·        1 (5-ounce) bag baby spinach
·        1/2 cup 1% low-fat milk
·        1/2 teaspoon kosher salt
·        1/4 teaspoon freshly ground black pepper
·        1/4 teaspoon crushed red pepper
·        4 large eggs
·        2 large egg whites
·        1.5 oz feta cheese, crumbled

Directions:

1. Preheat the oven to 350°, then peel and slice sweet potatoes into rounds.

2. Coat a pie dish with cooking spray, then fill the bottom of the dish with a layer of sweet potato slices. Cut the sweet potato rounds in half and fill around the edges of the pie dish; round side facing up.

3. Once the entire dish is filled, coat one more time with cooking spray. Bake for 20 minutes. Turn heat up to 375°.

4. For the filling, heat a nonstick skillet over medium heat. Add spinach; sauté 3 minutes. Remove from heat; cool.

5. Combine milk and next 5 ingredients in a bowl; stir with a whisk. Arrange spinach mixture in crust; pour egg mixture over spinach. Sprinkle with feta. Bake at 375° for 35 minutes.

Fruit Tart with Vanilla Pastry Cream (adapted from Erica’s Sweet Tooth)
Ingredients:
Crust:
·        1 large egg yolk
·        1 tbsp heavy cream
·        1/2 tsp vanilla extract
·        1-1/4 cups all-purpose flour
·        2/3 cup confectioners' sugar
·        1/4 tsp salt
·        8 tbsp unsalted butter, cold and cut into 1/2" cubes

Pastry cream:
·        2 cups whole milk
·        1/2 cup granulated sugar, plus 2 tbsp
·        4 tbsp cornstarch
·        2 egg yolks
·        1-1/2 tsp vanilla extract
·        3 tbsp unsalted butter, cut into pieces

Topping:
·        Whatever fruit you’d like! I used strawberries, kiwis, blackberries, blueberries and raspberries, but use whatever is in season

Directions:

Crust:
1. Whisk together the egg yolk, cream, and vanilla in a small bowl and set aside.

2. In a food processor, combine the flour, sugar, and salt and pulse briefly to combine. Add the butter pieces over the flour mixture and process until the mixture resembles coarse crumbs - about 15 1-second pulses. With the machine running, add the egg mixture until the dough just comes together (about 15 seconds).

3. Turn the dough onto a sheet of plastic wrap and press into a 6" disc. Wrap in plastic wrap and refrigerate for at least 1 hour and up to 2 days.

4. When the dough is ready, unwrap and roll the dough out onto a lightly floured surface into a 13" round. Transfer the dough to a 9" tart pan and mold the dough to the sides of the pan. Freeze the pan for 30 minutes.4

5. Preheat oven to 375 degrees. Put the tart pan on a baking sheet and press foil over the frozen shell and fill with pie weights. (I didn’t use the pie weights…perhaps this would have helped)

6. Bake for 30 minutes, rotating halfway through. Remove from oven, remove the foil and weights, and then bake another 5-8 minutes longer until golden brown. Transfer to a wire rack to cool.

Pastry Cream:
1. Combine the milk and 1/2 cup sugar in a saucepan over medium-high heat and stir until simmering.

2. Meanwhile in another bowl, whisk together the egg yolks and remaining 2 tbsp of sugar for about 15 seconds. Then add the cornstarch and mix until pale yellow and thick.

3. When the milk has reached a simmer, slowly add the milk to the egg yolk mixture, whisking constantly as you combine. Return the mixture to the saucepan and return to medium heat, whisking constantly until the mixture just starts to boil and the mixture is thickened.

4. Remove from heat and whisk in the butter and vanilla extract. Strain pastry cream through a fine mesh sieve set over a medium bowl.

5. Cover pastry cream with plastic wrap, making sure the wrap touches the top of the cream so that a skin doesn't form. Refrigerate until set, at least 3 hours and up to 2 days.

Topping:
1. Spread pastry cream evenly in tart shell and top with desired fruit.

John Wayne Casserole (family recipe)

Ingredients:
·        2 cans (4 oz) chopped green chilies
·        1 lb Monterrey Jack cheese, grated
·        1 lb cheddar cheese, grated
·        2/3 cup evaporated milk
·        2 tomatoes, sliced
·        1 T flour
·        ½ t salt
·        4 egg whites
·        4 egg yolks
·        1/8 t pepper

Directions:

1. Preheat the oven to 325°.

2. Drain and dice green chiles. Combine the grated cheeses and chiles in buttered shallow casserole dish (12x8x2).

3. In a large bowl, beat egg whites until stiff peaks form. In a small bowl, combine egg yolks, milk, flour, salt & pepper. Mix until well blended.

4. Gently fold beaten egg whites with a rubber spatula into the egg yolk mixture. Pour the mixture over the cheese in the casserole dish using a fork to ooze it through the cheese.

5. Bake for 30 minutes. Remove from oven and arrange the sliced tomatoes on the casserole. Bake for another 30 minutes or until the cheese in the center is firm. (If you do not use the tomatoes, bake for the full hour, but check periodically and once the top begins to brown, cover with tin foil).

Enjoy!

Better Byrd – St. Pete, FL

We have a new go-to restaurant.  Last week after our bike ride around St. Pete and visit to the Dali Museum, we met up with our friend Libby for a late lunch at the just-opened Better Byrd.  It’s run by the Ciccio Restaurant Group (who owns half the restaurants on Howard in Tampa – Daily Eats, Fresh Kitchen, Green Lemon, the Lodge, and Ciccio Water).   The other half of the Better Byrd building is actually another Fresh Kitchen, which shares an outdoor space so you have the choice of dining at either restaurant.

It is a fast casual concept which specializes in chicken and donuts.  I originally thought it was going to just be unhealthy fried chicken dishes, but they actually have amazing fresh bowl options as well.  Their menu is pretty extensive, but they have an area to review the options on the wall right when you walk in before you get in line if you’re indecisive.

Here’s a brief description of their philosophy:

I had their PestoByrd bowl with chicken, arugula, grape tomatoes, cucumber, lemon almond pesto, and quinoa.  I was really hoping for their sweet potato tots, but they apparently haven’t started serving those yet, so I got sweet potato fries instead, served with creamy maple dip.  Libby had their Melon Margaryta bowl, and Lance had their Numberone sandwich.

Lance and I had beers (they have several local ones available).  We saw on their website that their beers are only $3 on the weekends, but on checkout, the girl didn’t seem to know about that special (they had literally had their grand opening two days prior, so everyone was still in training…)  She seemed confused when we mentioned it to her, but we didn’t want to hold up the line and cause a scene about it, so we ended up just paying the normal $4 for our drinks.  They did give us Better Byrd coozies with our drinks to keep them cold though which was nice.

They have a bunch of amazing sounding donut flavors.  They are mini, which is great because you can eat more of them, but they sell them in sets of 3 per flavor.  The whole point of mini donuts is that you can try more variety, so they might as well just sell full-sized donuts if you’re eating 3 mini ones of one flavor.  This time we tried the hibiscus cardamom and the lemon poppy thyme (loved them both!)

I only ate half my bowl so I’d have room for donuts – it kept well for lunch the next day.

Only two days later, we returned with my cousin Jenn, my brother, David, and his girlfriend, Kim.  Jenn and David had just celebrated their birthdays, so we wanted to take them out to eat as a late gift.  It was more crowded that night – I guess the word got out about their delicious food!

I can’t even remember the last time I ate at the same restaurant twice in one week, but we enjoyed it so much the first time, we couldn’t wait to return. This time, I tried another one of the bowls – the Byrd-a-Bing with chicken, mixed greens, dried bing cherries, toasted walnuts, cucumber, quinoa and creamy mojo dressing.  I figured that since I wanted to try a few more donuts, I should get something healthy again.

I also had their homemade watermelon lemonade, which they have next to the soda fountain.  I didn’t get it the time before because I figured it would be a fake watermelon taste like a Jolly Rancher, but Libby gave me a sip of hers and it was super refreshing, so this time I got it for myself.

I tried one of my brother’s truffle garlic parmesan wings and it was amazing – I think next time we go, I’ll get the wings since they have several interesting varieties.

We had a dozen mini donuts between the 5 of us – cracker jack, pumpkin spice, chocolate raspberry, and toasted coconut.  I actually spoke with one of their employees about how I wished you could order the flavors individually since they all sound so good.  They all have the same cake base, but they are decorated freshly on order.  He explained that since they have just one person in charge of donuts in the back, it would be much too time consuming to have them do all different flavors all on one order.  Right now if you order 3 you can only get 1 flavor and with 6 you can get 2 flavors.  He said they may change it so you can order 2 different flavors with an order of 4 so you can try a bit more variety.

My favorites so far from the two trips have been the hibiscus cardamom and the chocolate raspberry – both were tossed in a sugary coating and have a slightly tart aftertaste.

It’s the perfect place to go with a group because they have something for just about everyone and it’s very reasonable.  Our meals averaged around $10.  It wouldn’t be ideal for vegetarians since it’s nearly all chicken dishes, but they do have the option for veggie burgers just in case.

Another location is coming to the Tampa side of the bay soon at the corner of Howard Ave and Platt St.  I have yet to find an opening date, but I’m excited we’ll have another one even closer to us soon!

Better Byrd is located at 4447 4th St N #1, St. Petersburg, FL 33703.  They are open 11am – 9pm Monday – Friday, 9am – 9pm on Saturday, and 9am – 8pm on Sunday.

Northwest Salad

We just got back from our honeymoon in Portland, Seattle, and Vancouver (ate so much great food – more on that soon!)

I also just started a new job this week doing marketing for an architecture firm which is super exciting.  Lots of big changes lately…

I have to be up pretty early for work, so I’ve been packing my lunch the night ahead.  And after indulging ourselves on vacation, we’re trying to eat healthy and get back to a routine.

It seems that every place we visited in the northwest had amazing salads – a lot of them including beets, sweet potatoes, avocado, and other ingredients I normally associate with fall.  I stocked up on tons of these ingredients at Trader Joe’s as soon as we got back from our trip, so we have plenty to keep us eating well.

One of the non-traditional items we asked for on our wedding registry was gift cards to Joe & Son’s Olive Oils.  We already bought several varieties – including chipotle infused olive oil, Tuscan herb olive oil, and fig balsamic.  They are perfect for simple salad dressings (and we’ve used them to drizzle on popcorn as well).

I’ve made a version of this salad 3 times this week already – it’s my new favorite lunch.  You can add or subtract ingredients as you like, but one of the things I like is that it has such a wide variety of ingredients.  You can include whatever veggies you like, or even add hard-boiled eggs, chicken, or other proteins.

Combine all ingredients & enjoy!  If you are planning to bring this for lunch, wait to add the nuts and the dressing to keep it from getting soggy (although this does hold up pretty well even with dressing…)

Pan Seared Salmon with Mediterranean Salsa Fresca and Toasted Couscous

I think I've found my new favorite seafood recipe.  I made this salmon dish for Valentine's Day dinner and it was very easy and tasted incredibly fresh.  I made enough for leftovers, which were great in a salad for lunch the next day.  If you like salmon, definitely try out this recipe!

Pan Seared Salmon with Mediterranean Salsa Fresca and Toasted Couscous (adapted from The Cozy Apron)

Ingredients:
  • 1-1/2 pounds salmon fillets, skinned
  • Olive Oil
  • 1 t paprika
  • 1 t garlic powder
  • 1/2 t onion powder
  • 1 t ground cumin
  • 1/4 t salt
  • 1/4 t pepper
  • pinch of red pepper
  • 1 t grated lemon zest
  • Mediterranean Salsa Fresca (recipe below)
  • Toasted couscous (recipe below)
Directions:

1. Cut the salmon into 4 equal fillets.  Place in a bowl and drizzle with 2 T olive oil.  Sprinkle paprika, garlic, onion, cumin, salt, pepper, red pepper, and lemon zest and toss to coat the fillets.  Allow to marinate at least 20 minutes, or as long as overnight.

2. Place a large cast-iron over medium-high heat.  Drizzle 2-3 T of olive oil.  Once oil is hot, add the salmon.  Sear on one side for about 4 minutes or until deep golden-brown.  Flip and allow to sear on the other side 4 more minutes.  Remove from skillet.

3. Serve the salmon over a bed of toasted couscous and a side of the Mediterranean Salsa Fresca.

Mediterranean Salsa Fresca

Ingredients:
  • 1 cup cherry tomatoes, quartered
  • 1 small cucumber, diced
  • 1/3 yellow bell pepper, diced
  • 3 T kalamata olives, diced
  • 1 t fresh dill, chopped
  • 1 t chopped parsley
  • 1/2 t lemon juice
  • Salt
  • Black pepper

Directions:

1. Combine all ingredients and chill until ready to serve.

Toasted Couscous

Ingredients:
  • 1 cup couscous
  • 1-1/4 cup water
  • salt
  • 1 T olive oil
  • 1 clove garlic, pressed
  • 1 t Italian seasonings

Directions:

1. Place a medium non-stock sauce pan over medium heat.  Add couscous and stir frequently while toasted.  Pour out of the pan and set aside.

2. In the same pan, add water, a few pinches salt, olive oil, and garlic.  Stir to combine.  Bring water to a vigorous simmer, pour in the couscous, and stir.  Turn off the heat and cover with a lid.  Allow couscous to soften 5-7 minutes and fluff with a fork.

Roasted Garlic

Ingredients:
  • 1 whole head garlic
  • 1 T olive oil
  • salt
  • pepper
  • Italian seasonings

Directions:

1.  Cut about 1/4 inch off the garlic so the inside is exposed.  Let soak in olive oil and spices while the oven preheats to 350.

2. Put the garlic cut-side down in the oven in a muffin tin (you can roast several at once if you'd like).  The garlic turns sweet after being roasted and makes the perfect spread for toasted bread.
